This 71 yo grandma continues to pack healthy food and snacks when on the road. Started as a young mom with no extra money for fast food. Continued as my kids got into sports, needing good snacks for practice and for away games. I’ve already started my list for our 4-5 day trip cross country moving from Vicksburg, MS, back to Washington state. You feel so much better eating good snacks. Driving an 18 wheeler for a living I can tell you that truck stops sell the crappiest food on the planet, so I take my own being that, Greek yogurt with honemade granola, Two peeled and sliced apples One bar 70% cocoa dark chocolate One banana Sometimes red grapes Hard boiled eggs same as you Watermelon peeled and sliced Watermelon blended drink Water ice cold Coconut water Just as some examples of ideas I can share with you
I drive an 18 wheeler too, and my husband and I are out for atleast 6 weeks at a time, and closer to the winter we will be out longer, because our company doesn't like us to take both holidays (Thanksgiving and Christmas) off so we have to choose to be out longer and we can't always stop at a store every weeks, so we are at the mercy of the truck stops most of the time. I hate the crappy food the truck stops serve.

I love to make almond butter and banana sandwiches and we always bring a bag of almonds, pumpkin seeds and unsweetened cranberries for my wife’s sweet tooth. We usually start the trip with a protein smoothie that keeps us full until our first stop. Loved all your ideas.
I like to imitate the Starbucks protein boxes so I take hard boiled eggs, grapes, peanut butter, crackers or rounds, and carrots or celery. We also like nuts and beef jerky for convenience.

My favorite salty/sweet snack in the car is Whisps Parmesan cheese crisps and dehydrated apple slices. I make my own dried apples but the Bare apple chips are great too. Together, they are the perfect combo of salty, sweet and crunchy 😋. And portable!
When my boys were younger (they’re grown & Have families of their own, now it’s usually just my husband & I as well as our daughter, who has Down Syndrome)I like to take a lot of the same things as you. If we’re going on a trip & leaving early in the morning, I make muffins, & along with it yogurt, fruit, juice or milk. For snacks, the same types of things cheese, fruits, veggies, nuts. Things I can buy in larger quantities so they’ll go further for a family of 5 & sometimes a few of their friends.Recently my son, his wife & their son & a couple of his friends were going on a long trip which required an early departure time. I told her what I always did, muffins, fruit etc & she said that is perfect & then turned to my son & said Bryon we’re stopping at the store on the way home & picking some things up & having breakfast in the car.

I love this content, and when we travel, I also pack a cooler pack - usually 2 - 1 for the food, and another for individual water bottles. 🚙 I do vegie sticks, hard boiled eggs and fruit pieces, nut packs, and also usually try to do some simple homemade treats, ie your carrot balls (so yummy!) Any fruit or vegies that need to be used up, I will pack, even if I need to lightly steam some vegies first. 🍇🍌🍎🍓🥕🌽🫑🥒🥦 Having some bread on hand is a usual too, especially if there a banana or two to add to it at a rest stop. 🍞 I also make sure we have antibacterial hand wipes, as well as extra handwashing water and soap. 🧼
There are great ideas here! Popcorn is a great salty snack to have on the road. I also love, and I know this may sound weird to some, peanut butter and banana sandwiches 🥪.

Oh yes, plane rations. Honestly all of that except the dairy products are things I take on planes. Air port food and water is too expensive. You can take an empty water bottle through security and fill it up at water fountains. You could also freeze gogurts to have later. We take egg sandwiches to eat at first airport and keep the pb/j for later.
I also bring healthy snacks on my 15-mile commute to work, whether using public transit or my bike. I agree your comment about mindless eating in a car, especially when sitting in slow traffic. I'll also have healthy snacks for before and after hanging out with friends to balance out food we inevitably get while shopping or watching sports

I tried to only stop at gas stations or grocery stores on our recent road trip. Gotta say having fresh fruit was a blessing. I swear I was starting to get reflux from eating out. I told my kiddo, "you are what you eat. So if we eat junk, we'll become junkies!"

Now we are in Europe and travel more on road trips, so I carry our coffee machine and coffee pods, Monkfruit sweetener, mixed nut and fruit bags (here they sell them without added junk ingredients), and fruit. Love these ideas except the fish isn't my thing. 😅 I always pack snacks for road trips and pack many of the same foods you do. One thing I like to have, that is convenient, is string cheese. I typically go for a light version although not always.

LMT is more for athletes who lose salk in work outs. Otherwise you get bloated as there is 1000mg sodium.
